Fun Halloween night :)
Tonight there was a social event for Fiji and ADPi after the exec meeting. We went to Terror under the bridge and it was a lot of fun. I haven't been to a haunted thing in forever and the characters were pretty fun/scary. The scary people inside the warehouse found out my name and screamed it/whispered it the while way through the the event. It was definitely freaky especially when I saw some clowns. They even put some little freaking kids in the mix which made it freakier. I would def go back next year it was that good. A ton of people came out tonight and Chanler was in my group. It was nice to get out. I had my CAT scan today and it took all of five mins. Hurricane sandy is hitting the north right now and Danni had to evacuate where she lives. Anat was supposed to evacuate but they decided to stay so I hope all goes well and they stay safe.

Beach Day
Today was rather relaxing. After class, Josh picked me up and we took Bear to the beach. Apparently Hurricane Sandy is coming by to say hey tomorrow and I had no idea. The beach was nice but cloudy. Bear loved it. He kept trying to dig holes. We lost his favorite green ball though :(. Once he was tired out some, we headed back to the apartment so Josh could go to a tea and ethics thing for homecoming. I took Bear to the vet. He weighs 4 pounds 11 ounces! He's gained a little over 2 lbs since the last time I took him in. And I forgot he turned 3 months yesterday! Tomorrow will be one month since we've gotten him. I can't believe it's going by that quickly. But today they had to give him some vaccinations and poor thing. He did really good when the needles went in him but the second one made him cry so bad. I've never heard it so bad. The vet said that it just burned it him but it looked like it hurt him a hell of a lot. He did good for the rest of the exam though and the "dandruff" i thought was on his ears, turned out to be a certain type of doggy lice that the vet didn't know about. She just prescribed him some medicated shampoo that we have to use on him once a week for a while. I swear, this breeder just did not take care of these pups to well. First giardia and now this. But at least he's with us and we'll take great care of him.
I have a cat scan scheduled for my ankle on Monday. I know there definetly had to be a break because it is starting to really hurt and I can feel it. Hopefully there's something they can do for it without really doing anything drastic. If not, oh well. I'll just deal with it.
I go home next week. I'm really excited and can't wait. Sometimes I just feel like I can't breathe here, that it'll never be a place i feel comfortable in. Even with Josh and Bear, it's not something I enjoy. I'll be glad when I graduate college and can go home. I love the way it smells there, the seasons, fall especially, the some what small town feel. It's easy to get away there and head to the mountains and just get lost in the beauty of everything. I know I have the beach here, but there's only so much of a beach site you can look at before it just doesn't do the whole peaceful trick any more. Only two and a half more years.

Pumpkin Bread Recipe
So tonight after I got back from work, I got bored and started looking up recipes for pumpkin bread because I was really craving some. I was expecting to be disappointed because I didn't have all the ingredients. I was right BUT I was able to make the bread still without everything and it still tastes pretty good :) It makes 3 loaves (about a 7x3 loaf bread pan thingy) and smells pretty good while cooking.
Ingredients
1 can pumpkin puree (15 ounce)
4 eggs
1 cup veggie oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
*The recipe I found also added 1 teaspoon ground nutmeg and 1/2 teaspoon ground cloves but I didn't have those so I didn't add them.
Directions
Preheat the oven to 350. Grease and flour loaf pan(s). If you have more than one, use it. It'll make for quicker cooking.
In a really large bowl, mix the pumpkin puree, eggs, oil, water and sugar until it's all blended.
In a different bowl, mix flour, baking soda, salt, cinnamon and ginger.
Stir dry ingredients into the pumpkin mix until it's blended.
Pour mixture into loaf pan about half way.
Put into the preheated oven for 50 minutes. Loaves will be done when whatever you have (toothpick, fork, knife) to stick in the middle of the loaf comes out clean.
This was my very first time making bread and baking all on my own. So I know my bread looks little funny but that's because I had to immediately take it out of the loaf pan so I could reuse it.
I'm sure if I'd had all the ingredients and some others, it would have been a bangin loaf of bread. As it is, it's moist, pumpkany and yummy. It cured my craving from pumpkin bread and I now have breakfast for the next two weeks :)

Is clumsiness an inherited gene?
I must either be super clumsy or really unlucky. Wednesday night after work, I was walking out of Smith to return the lab keys. I walked out of the wrong door and there was a big step that I didn't know was there and ended up landing on my ankle wrong. My ankle made a loud pop and I couldn't walk on. A nice couple ended up coming to help me and I got a ride from public safety and Josh helped me. I had to go to the health service center the next day and the hosiptal for x-rays. My doctor said my ankle is just a little broken. I get the glory of walking on crutches for the next week until we can determine what to do with my ankle. So, since I've gotten back to school, I've been bitten by a dog, had a broken ankle and endless cuts and bruises. It's all good though. I'll get to laugh about all this later :)
I'm so glad that he's sleeping all through the night. He'll stay in bed until we're ready to get up.
Bear is being a little stinker. Everyone says he looks like he's getting bigger but it's just hard to tell since we see him everyday. I know he's gained some weight and I'm so glad. Along with weight, he's gained tons of energy. He's able to run up the stairs now and he only takes one or two naps a day. Right now he's being a very bad boy and he peed allllll over the apartment. So he's been put in puppy jail.
Oh I forgot to add that Josh had a pledge bring me flowers and to tell me he loved me before I broke me ankle :).
Thursday night a huge group of us went to go see Paranormal Activity 4. I think more than half of Fiji came out to see it. It was pretty good just not as scary as the previous ones. The ending was somewhat predictable but still good. I hope the next one explains more and is scarier.

Working
Since I took all my exams last week and yesterday, I have NOTHING to do at work. I started reading this book called Soul Screamers, but it's just a typical teen read where the girl is a damsal in distress and some hot guy comes along to rock her world.
Right now, I'm trying to come up with an epic around the world trip where I hit up at least 5 continents and a lot countries and cities. First, I'm thinking I'll plan the route of the trip and then I'll start from there. I'll need to come up with how much it'll cost me. I've been doing some research and most people say it can $15,000. I'm pretty sure mine will cost more because I'll be going to more places than those other people went to. I know I'll need to start saving and I've already got some started so I can go on this trip.
This is what I have for my route plan so far. I'll go all over the US first, into canada some, down into South America, over to Europe, maybe 2 countries in Africa, Asia, Australia and pop on over to New Zealand before heading back home. I know it's a lot but I want to see the world before I settle down and i can't settle down until I put a dent in my dreams. I'm doing a pretty good job so far.
I'm hoping all my summer travel plans work out. If not, I'm going to go ahead and start an internship for my major that way I can get one or two out of the way and don't have to worry about it during the school year.
Tomorrow night, a group of us are going to go see Paranormal Acitivity 4 and I'm hoping it's good. The past 3 have been good so I'm keeping my hopes up for this one as well. I am hoping next week I can start on some good ol' halloween movies like Hocus Pocus and Halloween Town. Things just get so busy with work and school.

Sweet and Sour chicken with fried Rice a success
So the meal was a success and the chicken tasted just like the sweet and sour chicken you would get from a restaurant. I think it tasted similar to what I would get at PF Chang's. I know next I want to try the spicy and sweet chicken. But anyways, the chicken and sauce was really easy to make and so was the rice. The majority of the ingredients, I already had in the fridge and pantry. This is how I made my delicious homemade meal (I got the receipe from pinterest and changed it a little bit around). It was cheapish as well. I only spent $23 on everything I needed but it will keep me and my boyfriend fed for about 3-4 days.
Chicken
3 Boneless chicken breasts (I bought a pack of 5 but only used 3 because they were huge)
salt and pepper
1 cup of cornstarch
2 beaten eggs
1/4 cup of vegetable oil
Sweet and Sour Sauce
3/4 cup sugar
4 tbs ketchup
1/2 apple cider vinegar
1 tbs soy sauce
1 tsp garlic salt
I needed to double the amount of sauce I made because the chicken breasts I got were huge and there was a lot of chicken. So if you're not a saucy person, just make the amount listed above. Also, for extra sweetness, you can added pineapples. That's the next thing i want to try because I LOVE pineapples.
Preheat the over to 350. Clean chicken breasts and cut all the fatty parts off. Then cut the chicken breasts into bite sized pieces. Once the chicken is cut up, take the cornstarch and put it into a bag. Put the chicken into the ziplock bag with the cornstarch, salt and pepper to taste and mix around until all chicken is evenly coated. Heat up the oil in a skillet. Take the chicken out and mix it with the 2 beaten eggs and put chicken into skillet. Brown both sides but don't cook chicken all the way. Mix all the sauce ingredients into a bowl. When the chicken has been semi-cooked, put into a baking non-stick pan and spread the chicken out. Pour the sauce over the chicken and put in the oven for an hour. The chicken needs to be flipped and mixed around every 15 minutes.
The sauce will be liquidy at first but towards the last 20 minutes or so, the sauce will thicken up.
Fried Rice
3 cups white rice
3 tbs sesame oil
3 cloves of garlic, minced
1 small onion, chopped
2 beaten eggs
1/4 cup of soy sauce
1/4 cup of teriyaki sauce
Cook the rice. Take the onions and garlic and brown them in the sesame oil. Once the mix is transparent or golden brown, push it over to the side in your skillet and pour in the eggs. Let the eggs cook up and mix them up with the garlic and onions. Pour in the rice, soy sauce and teriyaki sauce and mix well. Once everything is mixed and thoroughly heated, you can serve.
For the rice, I ended up needing to switch pots because mine wasn't big enough, so get a big one.
I also served some sauteed vegetables with the meal.
Sauteed Vegetables
1 squash
1 zuchini
1 medium onion
3 tbs seasme oil
soy sauce and teriyaki sauce to taste
salt and pepper
Heat up the sesame oil and add chopped up squash, zuchini, and onions. Let the mixture brown up and add the soy sauce and teriyaki sauce. Add salt and pepper to taste.
I definetly will be making this meal again but it was really time consuming. It took me about 2 and half hours and I had to have my boyfriend help me. I'm new at the whole cooking thing, so maybe it doesnt take the long and hopefully it won't take so long in the future after I get better at cooking.

I found some yummy looking recipes on Pinterest for fried rice and honey glazed chicken. I'm also going to serve it with sautéed veggies. To bad I don't know how to make some good saki. If the recipes turn out good, ill def be keeping it on my list of foods to make in the future. Josh's grand-little will be over tonight so hopefully he enjoys the cuisine.

Lazy day
After classes, we had lunch at Moes and then Timmy headed back to Clemson. Josh and I napped for a couple hours which felt amazing. We woke up and just hung around until josh had to go to work. I went shopping and got a few things from the 21. I went to Walmart next to get some lunch food and it turned out I got way more food but ill def enjoy all of it. I forgot to pick up some apple cider vinegar. I really want some to see how well it does on Bear and Josh's blood pressure. After getting back it was time to cook for the boys. Nick bought kabasa sausage and zatarans zumbalia It was very tasty and I'm pretty sure ill put that on my list of foods to buy in the future. When they left, josh took bear out while I started cleaning. All of a sudden I hear a lot of water and thought josh had just come back and started dishes. Nope. There was a torrential downpour outside and poor bear and josh got caught in the sudden onslaught of rain. When I opened up the door for them, they were completely drenched. I wrapped bear up in a towel and he proceeded to fall into a dead-like sleep for two and a half hours. He even slept through me vacuuming And most of the laundry. Now we're studying for the business law exam tomorrow. Today I got back my accounting exam and I had a 98. I was pretty excited because I didn't think I was going to do to well. I'm hyped up on some coffee right now and feeling funny.
Feeling Crafty
This morning at work I got bored after I registered for my classes and since I have no homework or nothing to really study for, I got on pinterest. Josh had told me there's a place on craigslist offering free pallets and i looked them up. They said they usually have to get rid of ten per week, which means craft time for me hopefully. I'm going to have to be picky about what we make because we can't put holes in our wall with nails, so unfortunately I have to keep that to a minimum. BUT we are going to make some chairs and a nice table to put out on our pourch. And once Bear gets big enough to where he won't fall through the banister, we'll be able to use it nicely.

Day at the beach with my little man
Today was pretty fun. Josh and I woke up around 9 am and Bear had slept another whole night through without having to get up to pee. I was so excited since we both got to sleep a mostly full night. Josh and Timmy went to the commons for breakfast and I stayed home and made me a breakfast wrap with tator tots. When they got back from the commons, we headed to the beach and Bear got to come :). I thought he was going to be afraid to go on the beach since he got scared of the water the last time we went. No such thing happened this time. He was super playful and actually got to have free rein without me holding his leash. There weren't a lot of people around where we put our stuff so I started throwing his ball and he'd chase after it and bring it back. He's getting good at learning the concept of fetch. When we first got to the beach, he had started digging a whole and I'm not really sure if he was doing it for fun or was trying to find some cooler sand to lay in because as soon as he dug it, he laid in it. Timmy and Josh had gone to buy some beach stuff and they'd gotten a ball. As soon as they started kicking it around, Bear didn't want anything to do with his little green ball and started playing soccer with the guys. It was super cute. He loved it until Josh accidently hit him in the face with the ball but Bear still enjoyed himself. He even let some of the water from waves touch him and he didn't freak out. Once he was done playing, there was an older couple that started talking to me about Bear and what kind of breed he was. They were very sweet and from Savannah. I wanted to go walk down the beach for a bit but Bear had different plans. I think he maybe walked ten steps along the shore line, laid down and then refused to get up. So we went back to the chair and he passed out in my lap. We left around 3:15pm and headed back to the apartment. For dinner, we went to El Cerro, which I thought was pretty tasty. A lot better than El Patio but Josh didn't like it too much. We got back and I just started getting really tired. Now, Bear and I are wholed up in bed and cuddling while Josh is at work. I have to work first thing in the morning, so I'll be getting my sleep now.
